Good morning and welcome to my blog!  Let’s kick things off with an easy breakfast recipe, good for a snowy Saturday morning when the kids are up before dawn.  I’m sure there are more creative egg-free, dairy-free pancake recipes out there, but none that can get from pantry to table as fast as these.  Tender and sweet, we like them with unsweetened, cinnamon applesauce.

Simplest baking powder pancakes

2 c. all-purpose flour (or 1 1/3 c. all-purpose, 2/3 c. whole wheat)

4 tsp. baking powder

1/2 tsp. salt

2 tbsp. sugar

2 c. unsweetened rice milk -or- 1 1/2 c. soy milk plus 1/2 c. water

3 tbsp. safflower or canola oil, plus more for greasing pan

1/4 tsp. vanilla (optional)

Sift dry ingredients together in a mixing bowl.  Add wet ingredients and whisk until just combined.  Let rest while you heat a lightly greased skillet over medium heat.  When pan is hot, drop in batter by ladelfuls.  Cook 3 minutes, or until bubbles form on surface of pancakes.  Flip and cook 2 minutes more, or until golden brown.
